Seasonal Grain Bowl with Vantia Olive-Oil Packed Tuna

Ingredients:

  • 2 1/2 Cups of Cooked Grains, such as Quinoa, Barley, Farrow or Brown rice.

  • 1 1/2 tsp. Vantia Extra Virgin Olive Oil

  • Salt & Pepper

  • Juice of half a Lemon

  • 1/2 Cup Cherry Tomatoes

  • 1/4 Cup Red Onion, minced

  • 1/2 Cup Sautéed Vegetable of your choice, such as Zucchini or eggplant.

  • Vantia Olive-Oil Packed Tuna (1 Jar)

  • Chopped Parsley or Basil

Steps:

  1. Season the grains with Extra Virgin Olive Oil, Lemon Juice, Salt & Peppers to taste. Place in a shallow dinner plate.

  2. Top the grains with cherry tomatoes, red onion, and sautéed vegetables.

  3. Spoon two chunks of tuna on top of bowl. Finish with a squeeze of fresh lemon juice and a sprinkle of chopped parsley or basil. Serve immediately.
