“Cipolline” is the general name for a special category of small, flattened onions. Our prize winner is made with a specific heirloom type of Cipollines, called the "Borettana". We source them from Northern Italy, primarily in Emilia-Romagna. This region is known for its fertile alluvial soils and mild climate, which allow the Borettana onion to grow naturally year-round, with peak harvest taking place between late summer and early fall. Their characteristic flat, saucer-like shape and naturally sweet flavor is the result of a unique combination of terroir and long-rooted agricultural heritage – just like wine!

Our onions are grilled on a real professional grill. This authentic method gently caramelizes their natural sugars, creating true smoky notes, golden char marks, and a tender–yet–firm texture. (We like to mention they are actually grilled because many products in the market have “painted on” grill marks!)

We adore them on a cheese & charcuterie board – their acidity and slight smokiness make a marvelous counterpoint to all sorts of deliciously rich cheeses and cured meats. They are fantastic tossed into a simple salad – especially alongside traditional Italian lettuce varieties such as Castelfranco or Treviso. You can also easily take them outside of the Italian realm, by using them as a topper for hummus, folding them into a mac and cheese, grain bowl or quiche.
