Our brand is built on Provolone - we adore this cheese, so forgive us if we get carried away talking about it!
Provolone is part of the pasta filata family, meaning the curds are pulled and stretched before being worked, by hand, into their final shape—a technique also used for mozzarella. But unlike mozzarella, which is enjoyed fresh, Provolone is aged to develop its distinctive sharpness. The longer it’s aged, the more intense the flavor becomes, offering a delightful balance of savory, nutty, and slightly sweet notes.
Provolone also comes in all sorts of shapes - giant logs trussed up with taut ropes, funky gourds that resemble giant peeled clementines, or tiny Christmas ornaments. We carry all of them under our brand, working with a wonderful cheese producer in Northern Italy that operates as a cooperative of nine dairy farmers.
If you’re a cheese novice, try a young provolone - milky, tender and fun to eat, it’s a great snacking cheese.
