Our peppers are grown in the south of Italy in Apulia, and truly dried outdoors, slowly drying for hours under the Italian sun. This natural processing creates their tender & fleshy texture, and deep, fruity, sweet and tangy flavor profile. They are packed in olive oil, seasoned with just a bit of sugar, vinegar, and salt. Their processing is quite similar to sun-dried tomatoes, yet while the latter can sometimes be a little leathery, these are supple and silky.
They are used in the kitchen of some of the most popular Italian sandwich shops in New York – while it's not public knowledge, those are our "Vantia" peppers, we take great pride in knowing they are being enjoyed.
In terms of usage, the most popular one is certainly on a sandwich – all it takes is some fresh mozzarella, a few slices of prosciutto and maybe balsamic glaze and you've got yourself a stellar hero. But they are very versatile – you can blitz them into a paste and toss them with pasta, chop them up and add them to pasta salad or a green salad, or simply serve them as part of an antipasti or charcuterie board.
